Salmon cooked with aluminium paper parcels is a tasty and healthy meal option that is perfect for busy weeknights. This recipe is quick to prepare and involves minimal clean-up, which makes it a perfect option for those who are short on time.

Ingredients

  • 4 salmon fillets
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 4 tablespoons of honey
  • 4 tablespoons of soy sauce
  • 4 cloves of garlic (minced)
  • 4 tablespoons of chopped fresh parsley
  • 4 large pieces of aluminium paper

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Prepare your ingredients by cleaning and drying the salmon fillets. Place one fillet in the centre of each piece of aluminium paper.
  3. In a small bowl, mix together the olive oil, salt, black pepper, honey, soy sauce and minced garlic. Drizzle this mixture over the top of each salmon fillet.
  4. Next, sprinkle the chopped fresh parsley over the top of each fillet. Then, fold the edges of the aluminium paper up and over the salmon fillet to create a parcel, making sure it is tightly sealed.
  5. Place the parcels on a baking sheet and bake in the preheated oven for 15-20 minutes.
  6. Carefully open the aluminium paper parcels, being careful not to burn yourself, and serve the salmon immediately. Enjoy!
