Salmon Koulibiac with Spinach Recipe

Ingredients:

  • 1 sheet of frozen puff pastry, thawed
  • 1 1/2 lb salmon fillet, skinned and boned
  • 2 cups fresh spinach
  • 1/2 cup chopped onion
  • 1/4 cup chopped fresh dill
  • 2 tbsp butter
  • 1 egg, beaten
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 400°F.
  2. Line a baking sheet with parchment paper.
  3. Roll out the puff pastry into a rectangle on a lightly floured surface. Make sure it is large enough to enclose the salmon with some overlap.
  4. Place the salmon fillet in the center of the pastry.
  5. In a pan, cook spinach and onion until wilted. Drain excess liquid and stir in dill and butter.
  6. Spoon spinach mixture over salmon.
  7. Season with salt and pepper.
  8. Brush edges of pastry with the beaten egg.
  9. Carefully wrap the pastry around the salmon, pressing the edges together to seal.
  10. Place the pastry-wrapped salmon on the prepared baking sheet, seam-side down.
  11. Brush the top of the pastry with the beaten egg.
  12. Bake for 25-30 minutes until the pastry is golden brown and the salmon is cooked through.
  13. Remove from oven and let rest for 5 minutes before slicing and serving.
