Salmon Koulibiac with Spinach Recipe
Ingredients:
- 1 sheet of frozen puff pastry, thawed
- 1 1/2 lb salmon fillet, skinned and boned
- 2 cups fresh spinach
- 1/2 cup chopped onion
- 1/4 cup chopped fresh dill
- 2 tbsp butter
- 1 egg, beaten
- Salt and pepper to taste
Directions:
- Preheat oven to 400°F.
- Line a baking sheet with parchment paper.
- Roll out the puff pastry into a rectangle on a lightly floured surface. Make sure it is large enough to enclose the salmon with some overlap.
- Place the salmon fillet in the center of the pastry.
- In a pan, cook spinach and onion until wilted. Drain excess liquid and stir in dill and butter.
- Spoon spinach mixture over salmon.
- Season with salt and pepper.
- Brush edges of pastry with the beaten egg.
- Carefully wrap the pastry around the salmon, pressing the edges together to seal.
- Place the pastry-wrapped salmon on the prepared baking sheet, seam-side down.
- Brush the top of the pastry with the beaten egg.
- Bake for 25-30 minutes until the pastry is golden brown and the salmon is cooked through.
- Remove from oven and let rest for 5 minutes before slicing and serving.
