Sarthoise Hotpot Recipe

Ingredients:

  • 1 lb. boneless, skinless chicken breasts, diced
  • 1 lb. beef or pork sausage, sliced
  • 2 cups sliced carrots
  • 2 cups sliced celery
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 tsp. dried thyme
  • 1 tsp. dried rosemary
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 2 cups chicken broth
  • 1 cup dry white wine
  • 3 cups thinly sliced potatoes
  • 1 cup grated Gruyere cheese

Instructions:

  1. Preheat oven to 375°F.
  2. In a large Dutch oven, brown the chicken and sausage over medium-high heat. Remove from pot and set aside.
  3. Add the carrots, celery, onion, and garlic to the pot and sauté until vegetables are tender.
  4. Add the bay leaf, thyme, rosemary, salt, and pepper to the pot and stir to combine.
  5. Add the chicken broth and white wine to the pot and bring to a boil.
  6. Layer the sliced potatoes over the vegetable mixture.
  7. Return the browned chicken and sausage to the pot and sprinkle the grated Gruyere cheese on top.
  8. Cover the pot and bake in the oven for 1 hour or until the potatoes are tender and the cheese is melted and bubbly.

Serving suggestions:

Serve the Sarthoise hotpot with a side of crusty bread and a green salad for a complete and satisfying meal.
