Sauerkraut Salmon

Ingredients:

  • 2 salmon fillets
  • 1 cup sauerkraut
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper, to taste

Instructions:

  1. Preheat the oven to 375°F.
  2. Spread a layer of sauerkraut in the bottom of a baking dish.
  3. Pat the salmon fillets dry with a paper towel and season both sides with salt, pepper, and paprika.
  4. Heat the olive oil and butter in a skillet over medium-high heat.
  5. When the butter has melted and the skillet is hot, add the minced garlic and sauté for 1 minute until fragrant.
  6. Add the salmon fillets to the skillet, skin-side down, and sear for 2-3 minutes until the skin is crispy and golden.
  7. Remove the salmon fillets from the skillet and place them on top of the layer of sauerkraut in the baking dish.
  8. Cover the salmon fillets with another layer of sauerkraut.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 15-20 minutes.
  10. Remove the aluminum foil and bake for an additional 5-10 minutes until the sauerkraut is slightly crispy on top and the salmon is cooked through.
  11. Remove from the oven and let cool for a few minutes before serving.
