Ingredients

  • 1/2 lb. scallops, cleaned and chopped
  • 1/4 lb. cooked ham, diced
  • 1 cup all-purpose flour
  • 2 tsp. baking powder
  • 2 eggs, beaten
  • 1/2 cup milk
  • 2 tbsp. vegetable oil
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. In a large bowl, mix together the flour, baking powder, salt, and pepper.
  2. Add the eggs, milk, and vegetable oil to the dry ingredients and mix well until no lumps remain.
  3. Add the chopped scallops and ham to the pancake batter and stir until evenly combined.
  4. Heat a non-stick skillet or griddle over medium heat.
  5. Using a 1/4 cup measure, scoop batter onto the skillet and flatten to form a pancake.
