Scallops with Smoked Bacon and Foie Gras

Ingredients:

  • 12 large scallops, cleaned and deveined
  • 6 slices of smoked bacon, chopped
  • 100g foie gras, sliced
  • Salt and pepper, to taste
  • 2 tbsp olive oil

Instructions:

  1. Season the scallops with salt and pepper.
  2. In a frying pan, cook the chopped bacon until crispy. Remove from the pan and set aside.
  3. In the same pan, add 1 tablespoon of olive oil and sear the scallops over high heat for 1-2 minutes on each side until golden brown. Remove from the pan and set aside.
  4. In the same pan, add another tablespoon of olive oil and sauté the slices of foie gras until they are golden brown.
  5. To assemble, place a few pieces of bacon on a plate. Top with a seared scallop and a slice of foie gras.
  6. Serve immediately.
