Scones

Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/2 cup milk, cold
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the oven to 400°F (205°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the butter cubes into the mixing bowl and use a pastry cutter or fork to cut the butter into the dry mixture until it looks like coarse sand.
  4. In a separate bowl, whisk together the milk, egg, and vanilla extract until everything is evenly combined, then pour into the mixing bowl with the dry ingredients and butter, using a rubber spatula to combine everything together until a dough forms.
  5. Transfer the dough to a lightly floured surface and knead it a few times. Roll or pat the dough into a circle about 1 inch thick, and cut it into 8 even wedges. Alternatively, you could use a biscuit cutter to shape the scones instead.
  6. Place the scones on the baking sheet and brush the tops with a little bit of milk. Sprinkle a little sugar on top of each scone.
  7. Bake the scones in the preheated oven for about 15-20 minutes, or until they are golden brown in color and firm to the touch.
  8. Remove from the oven and let them cool on a wire rack. Serve with butter and jam.
