Shoot Caramel Recipe
Ingredients
- 1 cup granulated sugar
- 1/4 cup water
- 1/4 tsp cream of tartar
- 1/2 cup heavy cream
- 1 tbsp unsalted butter
- 1/4 tsp sea salt
Instructions
- Place sugar, water, and cream of tartar in a high-sided saucepan and turn the heat to medium-high.
- Swirl the pan gently as the sugar dissolves and comes to a boil.
- Let the sugar syrup cook until it reaches a dark amber color, approximately 7-8 minutes.
- Remove the pan from the heat and carefully pour in the heavy cream, stirring constantly. Be careful as the mixture will bubble and steam vigorously.
- Stir in the butter and sea salt, then return the pan to the heat and continue to cook for 2-3 minutes, stirring frequently, until the caramel is smooth and thick.
- Pour the caramel into a heat-proof container and let it cool to room temperature. The caramel will thicken as it cools.
- Once cooled, transfer the caramel to a squeeze bottle or other small container for easy shooting.
Verdict
