Shoot Caramel Recipe

Ingredients

  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/4 tsp cream of tartar
  • 1/2 cup heavy cream
  • 1 tbsp unsalted butter
  • 1/4 tsp sea salt

Instructions

  1. Place sugar, water, and cream of tartar in a high-sided saucepan and turn the heat to medium-high.
  2. Swirl the pan gently as the sugar dissolves and comes to a boil.
  3. Let the sugar syrup cook until it reaches a dark amber color, approximately 7-8 minutes.
  4. Remove the pan from the heat and carefully pour in the heavy cream, stirring constantly. Be careful as the mixture will bubble and steam vigorously.
  5. Stir in the butter and sea salt, then return the pan to the heat and continue to cook for 2-3 minutes, stirring frequently, until the caramel is smooth and thick.
  6. Pour the caramel into a heat-proof container and let it cool to room temperature. The caramel will thicken as it cools.
  7. Once cooled, transfer the caramel to a squeeze bottle or other small container for easy shooting.
