Shortbread with Comté cheese

Ingredients

  • 200g Plain flour
  • 100g Butter (unsalted and room temperature)
  • 50g Comté cheese (finely grated)
  • 1 Egg (beaten)
  • 1 tbsp. Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 160°C (fan).
  2. Mix the flour and butter in a bowl until it forms breadcrumbs.
  3. Add the grated Comté cheese, egg, Dijon mustard, salt, and pepper, and mix together well.
  4. Dust your hands with flour and roll the dough out onto a floured surface to a thickness of approximately 1/2 cm.
  5. Cut the dough into your desired shapes with a biscuit cutter or knife.
  6. Place the shortbread onto a baking tray lined with baking paper.
  7. Bake in the preheated oven for approximately 15 minutes, or until they are golden brown.
  8. Remove them from the oven and let them cool before sharing.
