Ingredients:

  • 250g plain flour
  • 125g unsalted butter, cold and cubed
  • 50g icing sugar
  • 1 egg
  • 1kg apples, peeled and thinly sliced
  • 100g caster sugar
  • 1 tsp cinnamon
  • 1 tbsp cornflour
  • 1 egg, beaten (for egg wash)

Instructions:

  1. In a mixing bowl, combine the flour, butter, and icing sugar. Use your fingertips to rub the butter into the flour until the mixture resembles breadcrumbs.
  2. Add the egg and mix until the dough comes together. Knead the dough for a few minutes until smooth.
  3. Wrap the pastry in cling film and refrigerate for at least 30 minutes.
  4. Preheat the oven to 180°C/160°C fan/gas 4.
  5. In another bowl, mix together the apples, caster sugar, cinnamon, and cornflour until the apples are coated evenly.
  6. Roll out two-thirds of the pastry on a floured surface to about 3mm thickness. Use the pastry to line a 20cm pie dish.
  7. Pile the apple mixture into the lined dish.
  8. Roll out the remaining pastry to about 3mm thickness and use it to cover the apples. Press the edges together to seal.
  9. Brush the top with beaten egg wash.
  10. Bake in the preheated oven for 45-50 minutes, or until the pie is golden and the apples are soft. If the edges start to brown too quickly, cover them with strips of foil.
  11. Let the pie cool for a few minutes before serving.
