Soft Chestnut Cake Recipe

Ingredients:

  • 200g peeled chestnuts
  • 50g all-purpose flour
  • 100g granulated sugar
  • 2 large eggs
  • 100ml whole milk
  • 100ml heavy cream
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt
  • Powdered sugar for dusting

Instructions:

  1. Preheat your oven to 180°C.
  2. In a large mixing bowl, combine the chestnuts and sugar. Using a hand mixer, blend together until it becomes a coarse paste.
  3. Add in the eggs, one at a time, and beat well after each addition until the mixture becomes light and fluffy.
  4. Mix in the flour, baking powder, and salt, until well combined.
  5. Stir in the milk, cream, and vanilla extract until the batter becomes smooth.
  6. Lightly grease an 8-inch cake pan with butter or cooking spray and pour in the batter.
  7. Bake for approximately 35-40 minutes, or until the top of the cake become golden brown and a cake tester comes out clean.
  8. Let the cake cool for about 15 minutes in the cake pan before removing it onto a wire rack to continue cooling.
  9. Dust with powdered sugar before serving.

This soft chestnut cake makes a perfect dessert for any occasion. Serve it warm or at room temperature with whipped cream and fresh fruits of your choice, such as berries or sliced peaches. You can also drizzle some chocolate or caramel sauce over the top for added sweetness.
