Sole Fillets with Lemon Butter Recipe

Ingredients:

  • 4 sole fillets
  • 3 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup dry white wine
  • 1/4 cup fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Melt 2 tablespoons of butter in a large skillet over medium heat.
  2. Mix flour, salt, and pepper in a shallow dish. Dredge each fillet in the flour mixture until coated on both sides.
  3. Place the coated fillets into the skillet and cook for 3-4 minutes on each side, or until they are golden brown and cooked through. Remove from the skillet and set aside.
  4. Add white wine, lemon juice, and remaining tablespoon of butter to the skillet and bring to a boil over medium heat. Reduce heat and simmer for 2-3 minutes, or until the sauce has thickened slightly.
  5. Return the fillets to the skillet and spoon the lemon butter sauce over the top.
  6. Sprinkle with parsley and serve immediately.
