Spiced plum jam

Spiced Plum Jam Recipe

Ingredients:

  • 2 pounds firm ripe plums, pitted and coarsely chopped
  • 1 cup granulated sugar
  • 1/4 cup honey
  • 1/4 cup fresh lemon juice
  • 1 cinnamon stick
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves

Instructions:

  1. Combine the plums, sugar, honey, lemon juice, cinnamon stick, ginger, and cloves in a large pot. Let the mixture sit for 30 minutes to allow the juices to release.
  2. Bring the mixture to a boil over medium-high heat, stirring occasionally.
  3. Reduce the heat to low and let the mixture simmer for about 45 minutes to 1 hour, stirring occasionally, until the jam has thickened and the plums have broken down.
  4. Remove the cinnamon stick and discard.
  5. If desired, use an immersion blender to puree the jam until it’s as smooth or as chunky as you like.
  6. Pour the jam into clean glass jars and let cool to room temperature before refrigerating. The jam will keep in the fridge for up to 2 weeks.
