Stir-fried Beef with Olives Recipe
Ingredients:
- 500g beef, sliced into thin strips
- 1 tbsp vegetable oil
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 cup pitted Kalamata olives
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley, for garnish
Directions:
- Heat a wok or large frying pan over high heat. Add the vegetable oil and swirl to coat.
- Add the sliced beef and stir-fry for 2-3 minutes or until browned. Transfer to a plate and set aside.
- Add the sliced onion and bell peppers to the wok and stir-fry for 2-3 minutes or until tender.
- Add the minced garlic, cumin, smoked paprika, salt, and pepper. Stir-fry for 30 seconds or until fragrant.
- Add the olives and stir-fry for another 1-2 minutes.
- Return the beef to the wok and stir-fry for another minute or until heated through.
- Transfer the stir-fry to a serving platter and garnish with chopped fresh parsley.
