Stir-fried Beef with Olives Recipe

Ingredients:

  • 500g beef, sliced into thin strips
  • 1 tbsp vegetable oil
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup pitted Kalamata olives
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley, for garnish

Directions:

  1. Heat a wok or large frying pan over high heat. Add the vegetable oil and swirl to coat.
  2. Add the sliced beef and stir-fry for 2-3 minutes or until browned. Transfer to a plate and set aside.
  3. Add the sliced onion and bell peppers to the wok and stir-fry for 2-3 minutes or until tender.
  4. Add the minced garlic, cumin, smoked paprika, salt, and pepper. Stir-fry for 30 seconds or until fragrant.
  5. Add the olives and stir-fry for another 1-2 minutes.
  6. Return the beef to the wok and stir-fry for another minute or until heated through.
  7. Transfer the stir-fry to a serving platter and garnish with chopped fresh parsley.
