Strawberry-raspberry mousse

Strawberry-raspberry mousse recipe

Ingredients:

  • 1 cup fresh strawberries, hulled and chopped
  • 1 cup fresh raspberries
  • 1/2 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1 envelope unflavored gelatin
  • 1 1/2 cups heavy cream

Instructions:

  1. In a blender or food processor, puree the strawberries and raspberries until smooth. Strain the mixture through a fine-mesh sieve and into a saucepan, reserving the solids that are left in the sieve. Add the sugar and lemon juice to the saucepan and bring the mixture to a boil over medium heat, stirring occasionally.
  2. Sprinkle the gelatin over the reserved solids in the sieve and use a spoon to press the gelatin through. Add the gelatin mixture to the saucepan and stir until it is completely dissolved. Remove the pan from the heat and let the mixture cool to room temperature.
  3. In a large bowl, beat the heavy cream until soft peaks form. Gradually fold in the fruit mixture, being careful not to overmix.
  4. Pour the mixture into individual glasses or a large serving bowl. Cover and refrigerate for at least 2 hours, or until set. Serve cold.
