Stuffed Christophines Recipe
Ingredients
- 4 christophines
- 1 pound ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 garlic cloves, minced
- 1 cup cooked rice
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup Parmesan cheese, grated
- 1/4 cup Italian breadcrumbs
- 1/4 cup olive oil
Instructions
- Preheat oven to 375°F.
- Cut the top off of each christophine and scoop out the center, removing all the seeds and as much flesh as possible.
- In a large skillet, cook the ground beef, onion, bell pepper, and garlic over medium heat until the beef is browned.
- Add the cooked rice, paprika, salt, and black pepper to the skillet and stir to combine.
- Remove from heat and stir in Parmesan cheese and Italian breadcrumbs.
- Fill each christophine with the beef and rice mixture, packing it in tightly and mounding it on top. Drizzle olive oil over the tops of each christophine.
- Bake for 30-35 minutes or until the christophines are tender and the filling is hot and bubbly.
