Stuffed Christophines Recipe

Ingredients

  • 4 christophines
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 garlic cloves, minced
  • 1 cup cooked rice
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup Italian breadcrumbs
  • 1/4 cup olive oil

Instructions

  1. Preheat oven to 375°F.
  2. Cut the top off of each christophine and scoop out the center, removing all the seeds and as much flesh as possible.
  3. In a large skillet, cook the ground beef, onion, bell pepper, and garlic over medium heat until the beef is browned.
  4. Add the cooked rice, paprika, salt, and black pepper to the skillet and stir to combine.
  5. Remove from heat and stir in Parmesan cheese and Italian breadcrumbs.
  6. Fill each christophine with the beef and rice mixture, packing it in tightly and mounding it on top. Drizzle olive oil over the tops of each christophine.
  7. Bake for 30-35 minutes or until the christophines are tender and the filling is hot and bubbly.
