Stuffed Green Cabbage

Ingredients:

  • 1 large green cabbage, cored
  • 1 lb ground beef
  • 1 cup cooked white rice
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp dried thyme leaves
  • 1 egg, lightly beaten
  • 1/2 cup tomato sauce
  • 1/2 cup beef broth

Instructions:

  1. Preheat oven to 350°F.
  2. Bring a large pot of water to a boil. Cut the core from the cabbage and carefully pull off as many leaves as you can, trying to keep them whole.
  3. Add the cabbage leaves to the boiling water and cook for 5-6 minutes, until they are wilted and pliable. Drain and set aside.
  4. In a large bowl, mix together ground beef, cooked rice, chopped onion, minced garlic, dried thyme, egg, 1/4 cup of tomato sauce, and salt and pepper to taste.
  5. Take each cabbage leaf and place about 2-3 tablespoons of filling on the stem end of the leaf. Roll up the leaf, tucking in the sides as you go, to form a packet. Repeat with remaining leaves and filling.
  6. Spoon the remaining tomato sauce and beef broth into the bottom of a large baking dish. Place the cabbage packets on top, seam side down.
  7. Cover the dish with foil and bake for 1 hour. Remove the foil and bake for an additional 20-30 minutes, until the cabbage is tender and the filling is cooked through.
  8. Remove from oven and let cool for a few minutes before serving.
