Ingredients

  • 12 Large Paris mushrooms
  • 2 Tbsp Olive oil
  • 1 Onion, finely chopped
  • 2 Garlic cloves, minced
  • 1 Cup fresh spinach, finely chopped
  • 1/2 Cup Ricotta cheese
  • 1/2 Cup Parmesan cheese, grated
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375°F.
  2. Remove the stems from the mushrooms and clean them with a damp cloth.
  3. Chop the stems finely and set aside.
  4. Heat the olive oil in a skillet over medium heat.
  5. Add the onion and garlic and sauté until the onions are translucent.
  6. Add the chopped mushroom stems and cook for 2-3 minutes.
  7. Add the spinach and cook until it wilts.
  8. Remove from heat and let cool.
