Stuffed Potatoes Au Gratin
Ingredients:
- 4 medium-sized potatoes
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded cheddar cheese
- 3 cloves garlic, minced
- 3 tablespoons unsalted butter
- 1/2 tablespoon chopped fresh thyme
- Salt and pepper, to taste
Directions:
- Preheat the oven to 375°F.
- Wash and dry the potatoes, then poke several holes in each potato using a fork.
- Bake the potatoes for 1 hour, or until tender.
- Cut off the top of each potato and scoop out the flesh using a spoon, leaving a thin layer of potato on the skin.
- In a large bowl, mash the potato flesh with the heavy cream, Parmesan cheese, garlic, butter, thyme, salt and pepper.
- Spoon the potato mixture back into the potato skins, filling them to the top.
- Sprinkle the cheddar cheese over the top of the potatoes.
- Bake the stuffed potatoes for 20-25 minutes, or until the cheese is melted and the tops are golden brown.
