Stuffed Potatoes Au Gratin

Ingredients:

  • 4 medium-sized potatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 3 cloves garlic, minced
  • 3 tablespoons unsalted butter
  • 1/2 tablespoon chopped fresh thyme
  • Salt and pepper, to taste

Directions:

  1. Preheat the oven to 375°F.
  2. Wash and dry the potatoes, then poke several holes in each potato using a fork.
  3. Bake the potatoes for 1 hour, or until tender.
  4. Cut off the top of each potato and scoop out the flesh using a spoon, leaving a thin layer of potato on the skin.
  5. In a large bowl, mash the potato flesh with the heavy cream, Parmesan cheese, garlic, butter, thyme, salt and pepper.
  6. Spoon the potato mixture back into the potato skins, filling them to the top.
  7. Sprinkle the cheddar cheese over the top of the potatoes.
  8. Bake the stuffed potatoes for 20-25 minutes, or until the cheese is melted and the tops are golden brown.
