Sweet Potato Gratin Recipe

Ingredients:

  • 4 medium sweet potatoes, peeled and sliced thin
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper

Directions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray.
  2. In a large mixing bowl, whisk together the heavy cream, garlic, thyme, salt and pepper until well combined.
  3. Add the sweet potatoes to the bowl, then toss to coat them completely in the cream mixture.
  4. Arrange the sweet potato slices in the prepared baking dish, layering them to create an even surface.
  5. Pour any remaining cream mixture over the top of the sweet potatoes.
  6. Cover the dish with foil and bake in the preheated oven for 30 minutes.
  7. Remove the foil, then sprinkle the grated Parmesan cheese over the top of the sweet potatoes.
  8. Bake uncovered for another 30-35 minutes, or until the cheese is melted and golden brown, and the sweet potatoes are tender.
  9. Remove from the oven and let cool for a few minutes before serving.
