Swiss Rosti

Ingredients:

  • 4 large potatoes
  • 1 onion
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter

Instructions:

  1. Peel the potatoes and grate them on the large side of a box grater.
  2. Finely chop the onion.
  3. Place the grated potatoes and chopped onion in a bowl. Add salt and pepper and mix well.
  4. Melt the butter in a large non-stick skillet over medium heat.
  5. Add the potato mixture to the skillet and press down with a spatula to form a smooth layer.
  6. Cook for 10-12 minutes or until the bottom is crispy and golden brown.
  7. Using a plate, carefully flip the rosti over and return it to the skillet.
  8. Cook for another 10-12 minutes or until the other side is crispy and golden brown.
  9. Remove from skillet and transfer to a serving plate.
