Tagine of Fish with Curry Recipe

Ingredients:

  • 1 lb white fish (cod or halibut), cut into large chunks
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-2 tablespoons curry powder (depending on how spicy you like it)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 oz) diced tomatoes
  • 1 red bell pepper, seeded and sliced
  • 1/4 cup green olives, pitted and chopped
  • 1/2 cup water
  • Salt and pepper, to taste
  • Fresh cilantro, chopped, for garnish
  • Lemon wedges, for serving

Instructions:

  1. Heat olive oil in a large tagine or saucepan over medium-high heat. Add onions and garlic and sauté for 3-4 minutes until soft.
  2. Add curry powder, cumin, paprika, turmeric, cinnamon, cayenne pepper, and stir to combine.
  3. Add canned tomatoes, sliced peppers, and chopped olives. Cook for approximately 5 minutes.
  4. Add water, and season with salt and pepper. Bring the mixture to a gentle simmer and cook for a further 5 minutes.
  5. Add fish and cover the tagine or saucepan and cook over medium heat for 10-12 minutes or until the fish is fully cooked.
  6. Uncover the tagine and simmer for a further 5-10 minutes until the sauce thickens and the fish is fully cooked through.
  7. Garnish with fresh cilantro and serve with lemon wedges on the side.

Serving Suggestions:

Serve the tagine hot over a bed of fluffy couscous or with crusty bread for dipping. You can also top with sliced avocado, crumbled feta cheese, or chopped tomatoes for added flavor. This dish is perfect for a cozy evening at home or a dinner party with friends. Enjoy!
