Tagliatelle with Prawns and Lime Cream

Ingredients:

  • 400g tagliatelle
  • 500g prawns, peeled and deveined
  • 1 cup heavy cream
  • 2 limes, juiced and zested
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Parsley, chopped for garnish

Instructions:

  1. Bring a large pot of salted water to a boil. Add tagliatelle and cook until al dente, according to package instructions. Reserve 1 cup of pasta water before draining pasta.
  2. Melt butter in a pan over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
  3. Add prawns to the pan and cook until they start to turn pink, about 3-4 minutes.
  4. Reduce heat to low and add heavy cream to the pan. Stir until well combined.
  5. Add lime juice and zest to the pan, stirring well. Season with salt and pepper to taste.
  6. Add drained pasta and reserved pasta water to the pan and toss to coat noodles with sauce and prawns.
  7. Garnish with chopped parsley and serve hot.
