Tajine Egg Kefta Recipe
Ingredients:
- 500g ground beef
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 tablespoon chopped parsley
- 4-6 eggs
- 2 tomatoes, diced
- 1 tablespoon olive oil
- 1 tablespoon tomato paste
- Salt and pepper, to taste
Instructions:
- In a large mixing bowl, combine the ground beef, onion, garlic, cumin, coriander, parsley, salt, and pepper.
- Mix everything together well until it reaches a smooth consistency.
- Divide the mixture into small, round meatballs about the size of a golf ball.
- Heat the olive oil in a tagine over medium heat.
- Add the meatballs and cook for about 5-7 minutes or until browned on all sides.
- Add tomato paste and diced tomatoes. Cover and let it simmer for around 10min, until the tomatoes are lightly cooked.
- Making a small dip in the center of the tagine, crack an egg and repeat until all the eggs are gone and cover for 7-10 minutes.
- Once the egg whites are set, remove from heat and let the Tagine cool down.
