Tajine Egg Kefta Recipe

Ingredients:

  • 500g ground beef
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 tablespoon chopped parsley
  • 4-6 eggs
  • 2 tomatoes, diced
  • 1 tablespoon olive oil
  • 1 tablespoon tomato paste
  • Salt and pepper, to taste

Instructions:

  1. In a large mixing bowl, combine the ground beef, onion, garlic, cumin, coriander, parsley, salt, and pepper.
  2. Mix everything together well until it reaches a smooth consistency.
  3. Divide the mixture into small, round meatballs about the size of a golf ball.
  4. Heat the olive oil in a tagine over medium heat.
  5. Add the meatballs and cook for about 5-7 minutes or until browned on all sides.
  6. Add tomato paste and diced tomatoes. Cover and let it simmer for around 10min, until the tomatoes are lightly cooked.
  7. Making a small dip in the center of the tagine, crack an egg and repeat until all the eggs are gone and cover for 7-10 minutes.
  8. Once the egg whites are set, remove from heat and let the Tagine cool down.
