Tarragon Oven-Roasted Chicken Recipe
Ingredients:
- 1 whole chicken, approximately 4-5 lbs
- 2 tablespoons olive oil
- 2 tablespoons fresh tarragon, finely chopped
- 1 tablespoon garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced into wedges
Instructions:
- Preheat the oven to 425°F (218°C).
- Pat dry the chicken with paper towels. In a small bowl, mix together olive oil, tarragon, garlic, salt, and black pepper.
- Using a pastry brush, brush the chicken all over with the tarragon mixture, including the underneath of skin. Don’t forget to rub some inside the cavity of the chicken too.
- Place the lemon wedges inside the chicken cavity and tie the legs together with kitchen twine.
- Place the chicken on a large oven-safe dish and roast it in the oven for 1 hour 15 minutes or until the internal temperature in the thickest part of the chicken reads 165°F (74°C).
- Remove the chicken from the oven and let it rest for 10 minutes before carving it.
