Tarragon Oven-Roasted Chicken Recipe

Ingredients:

  • 1 whole chicken, approximately 4-5 lbs
  • 2 tablespoons olive oil
  • 2 tablespoons fresh tarragon, finely chopped
  • 1 tablespoon garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon, sliced into wedges

Instructions:

  1. Preheat the oven to 425°F (218°C).
  2. Pat dry the chicken with paper towels. In a small bowl, mix together olive oil, tarragon, garlic, salt, and black pepper.
  3. Using a pastry brush, brush the chicken all over with the tarragon mixture, including the underneath of skin. Don’t forget to rub some inside the cavity of the chicken too.
  4. Place the lemon wedges inside the chicken cavity and tie the legs together with kitchen twine.
  5. Place the chicken on a large oven-safe dish and roast it in the oven for 1 hour 15 minutes or until the internal temperature in the thickest part of the chicken reads 165°F (74°C).
  6. Remove the chicken from the oven and let it rest for 10 minutes before carving it.
