Thai Rice with Prawns Recipe
Ingredients:
- 1 cup jasmine rice
- 1 1/2 cups water
- 1 tbsp vegetable oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 red bell pepper, chopped
- 1/2 cup green beans, trimmed and chopped
- 1/2 cup baby corn
- 1/2 cup sliced mushrooms
- 1 lb large prawns, peeled and deveined
- 1 tbsp red curry paste
- 1 tbsp fish sauce
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions:
- Rinse the rice in a fine mesh strainer under cold water until the water runs clear. Drain well.
- In a medium saucepan, bring the water to a boil. Add the rice and stir. Turn the heat to low and cover the pot. Cook for 18-20 minutes until the rice is tender and the water has been absorbed.
- Meanwhile, in a large skillet, heat the oil over medium heat. Add the onion and garlic. Cook for 2-3 minutes until the onion is soft and translucent.

- Fluff the rice with a fork and divide among plates. Spoon the prawn mixture over the rice. Serve with lime wedges.
