Thai Samosas Recipe

Ingredients:

  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Thai red curry paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 cup diced sweet potato
  • 1/2 cup drained canned crushed tomatoes
  • 1/4 cup water
  • 1/4 cup chopped fresh coriander
  • Salt and freshly ground black pepper
  • 12 large egg roll wrappers
  • All-purpose flour, for dusting
  • 1 egg, beaten with 1 tablespoon water
  • Vegetable oil, for deep-frying
  • Sweet chili sauce, for serving

Instructions:

  1. Heat the vegetable oil in a large frying pan over medium heat. Add the onion and garlic and cook for 5 minutes or until the onion is soft.
  2. Add the curry paste, cumin, coriander, and sweet potato and cook, stirring, for 5 minutes or until the sweet potato is just tender.
  3. Add the tomatoes and water and cook, stirring occasionally, for 10 minutes or until most of the liquid has evaporated. Remove from the heat and stir in the fresh coriander. Season with salt and freshly ground black pepper to taste.
  4. Cut each egg roll wrapper into 4 squares. Dust a work surface with flour and lay out a square of pastry with a corner facing you. Brush the edges with the egg wash and place a heaped teaspoon of the sweet potato mixture in the middle.
  5. Take the corner nearest to you and bring it over the filling to form a triangle. Press the edges together to seal. Repeat with the remaining squares and filling.
  6. Preheat the oil in a deep-fryer or large saucepan to 180°C. Fry the samosas in batches for 2–3 minutes or until golden and crisp. Drain on paper towels and serve hot with sweet chili sauce.
