Thermomix Cabbage Soup Recipe

Ingredients:

  • 1 head of cabbage, chopped into bite-sized pieces
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon olive oil
  • 6 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • Optional: 1 cup cooked quinoa or brown rice

Instructions:

  1. Preheat your Thermomix on 120°C.
  2. Place the cabbage, carrots, celery, onion, and garlic in the Thermomix bowl and chop them gradually for 5 seconds, speed 5.
  3. In a frying pan, heat olive oil over medium heat, add the chopped vegetable mix to it and fry them for about 5-7 minutes. Almost all the water should evaporate, and vegetables should be lightly browned.
  4. Add the vegetable mixture back to the Thermomix bowl and add vegetable broth, thyme, smoked paprika, salt, black pepper, and bay leaf to it.
  5. Increase the thermomix temperature to 100°C and cook the soup for around 20-25 minutes.
  6. After soup is cooked, remove the bay leaf and blend the soup using the Thermomix blending function.
  7. If using cooked quinoa or brown rice, add them to the soup and cook for another 5-10 minutes until heated through.
  8. Ladle the soup into bowls and serve hot with some crusty bread on the side.
