Thermomix Pastry Flan Recipe

Ingredients:

  • 300g plain flour
  • 150g unsalted butter, cubed and chilled
  • ¼ tsp salt
  • 1 egg
  • 2 tbsp cold water
  • 1 tbsp lemon juice
  • 1 tbsp caster sugar
  • 400g can of fruit filling of your choice (eg. apple, blueberry, cherry, etc.)

Instructions:

  1. Place the flour, butter, and salt in the bowl of the Thermomix. Process for 10 seconds on Speed 6 or until the mixture resembles breadcrumbs.
  2. Add the egg and process for 5 seconds on Speed 5 or until the dough comes together.
  3. Add the water and lemon juice and process for 5 seconds on Speed 5 or until the dough forms a ball.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat the oven to 180°C (350°F).
  6. Roll out the pastry on a floured surface and use it to line a 23cm (9-inch) tart tin.
  7. Prick the bottom of the pastry with a fork.
  8. Sprinkle the caster sugar over the base of the pastry.
  9. Add the fruit filling to the pastry.
  10. Bake in the preheated oven for 35-40 minutes or until the pastry is golden brown.
  11. Serve hot or cold.
