Tofu Omelet

Ingredients:

  • 1 block of tofu, drained and squeezed
  • 1 tablespoon nutritional yeast
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon paprika powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 tablespoon vegetable oil or cooking spray
  • 1/4 cup diced mushrooms
  • 1/4 cup diced bell peppers
  • 1/4 cup diced onion

Directions:

  1. In a mixing bowl, crumble the tofu using a fork until it resembles scrambled eggs.
  2. Add the nutritional yeast, turmeric powder, paprika powder, garlic powder, onion powder, salt, and black pepper to the bowl. Mix well to combine.
  3. Heat a non-stick skillet over medium-high heat. Add the vegetable oil or use cooking spray to lightly coat the skillet.
  4. Add the diced mushrooms, bell peppers, and onion to the skillet. Sauté for 2-3 minutes until they are soft.
  5. Spread the tofu mixture evenly in the skillet and let it cook for 2-3 minutes, or until the bottom is golden brown.
  6. Using a spatula, gently fold one side of the omelet over the other side to create a half-moon shape.
