Tomato Mozzarella Tatin Recipe
Ingredients:
- 1 puff pastry sheet, thawed
- 2 tablespoons olive oil
- 1 onion, sliced
- 2 garlic cloves, minced
- 4-6 Roma tomatoes, sliced
- 8 oz. mozzarella cheese, sliced
- 2 tablespoons balsamic vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Preheat the oven to 400°F (200°C).
- Heat the olive oil in a skillet over medium heat. Add the sliced onion and garlic, and cook for 5-7 minutes until tender and translucent.
- Spread the onion mixture evenly on the bottom of a 9-inch (23cm) cast iron skillet. Drizzle with balsamic vinegar.
- Arrange the tomato slices on top of the onion mixture in the skillet, overlapping them slightly. Season with oregano, salt, and pepper.
- Arrange the mozzarella cheese slices on top of the tomatoes.
- Roll out the puff pastry sheet onto a lightly floured surface. Cut a 10-inch (25cm) circle from the puff pastry sheet and place it over the mozzarella cheese, tucking the edges into the skillet.
- Bake for 30-35 minutes, or until the puff pastry is golden brown and puffed up.
- Remove from the oven and let cool for a few minutes before inverting onto a serving dish. Serve warm.
