Tomato Mozzarella Tatin Recipe

Ingredients:

  • 1 puff pastry sheet, thawed
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 4-6 Roma tomatoes, sliced
  • 8 oz. mozzarella cheese, sliced
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Heat the olive oil in a skillet over medium heat. Add the sliced onion and garlic, and cook for 5-7 minutes until tender and translucent.
  3. Spread the onion mixture evenly on the bottom of a 9-inch (23cm) cast iron skillet. Drizzle with balsamic vinegar.

  7. Bake for 30-35 minutes, or until the puff pastry is golden brown and puffed up.
  8. Remove from the oven and let cool for a few minutes before inverting onto a serving dish. Serve warm.
