Tomato Water – Treat
Ingredients:
- 6 to 8 ripe tomatoes, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
Instructions:
- In a large bowl, add the chopped tomatoes and sprinkle with salt, pepper, and cayenne pepper.
- Use a potato masher or the back of a fork to smash the tomatoes and release their juices.
- Let sit for 30 minutes to allow the flavors to meld and the water to separate from any solids.
- Place a fine-mesh strainer over a bowl or pitcher and carefully pour the tomato mixture into the strainer.
- Use a spoon to gently press on the solids in the strainer to extract all the tomato water.
- Discard the solids and chill the tomato water until ready to serve.
