Tournedos Rossini Recipe

Ingredients:

  • 4 beef tournedos (fillet steaks)
  • Salt and freshly ground black pepper
  • 2 tablespoons olive oil
  • 4 slices of foie gras (goose or duck liver)
  • 4 slices of brioche bread
  • 4 tablespoons butter
  • 1/2 cup beef stock
  • 1/4 cup Madeira wine

Instructions:

  1. Preheat oven to 425°F (220°C).
  2. Season the tournedos with salt and black pepper.
  3. Heat the olive oil in a large skillet over high heat.
  4. Add the tournedos and sear for 2-3 minutes on each side.
  5. Remove the tournedos from the skillet and place them on a baking sheet.
  6. Top each tournedo with a slice of foie gras.
  7. Place the baking sheet in the oven and cook for 5-7 minutes for medium-rare, or until desired doneness is reached.
  8. While the tournedos are cooking, toast the brioche slices in a separate skillet with butter until golden brown.
  9. Remove the tournedos from the oven and transfer them to a plate, leaving the foie gras on top.
  10. Place the skillet with the remaining juices on medium heat and add the beef stock and Madeira wine.
  11. Bring the sauce to a boil and cook until it has thickened, for 5-7 minutes.
  12. Serve the tournedos with the sauce and the toasted brioche slices on the side.
