Ingredients:
- 4 beef tournedos (fillet steaks)
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 4 slices of foie gras (goose or duck liver)
- 4 slices of brioche bread
- 4 tablespoons butter
- 1/2 cup beef stock
- 1/4 cup Madeira wine
Instructions:
- Preheat oven to 425°F (220°C).
