Turkey with Dried Fruits and Mashed Sweet Potatoes with Orange Recipe

Ingredients:
- 1 turkey breast, bone-in (about 2-3 lbs)
- 1/2 cup dried apricots, chopped
- 1/2 cup dried cranberries
- 1/2 cup raisins
- 1/4 cup unsalted butter, melted
- 1/4 cup honey
- 1/4 cup orange juice
- 2 cloves garlic, grated
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions:
- Preheat oven to 375°F (190°C).
- In a bowl, mix together chopped apricots, cranberries, raisins, melted butter, honey, orange juice, garlic, thyme, salt, and black pepper.
- Place the turkey breast, skin side up, in a baking dish. Spread the dried fruit mixture over the top of the turkey, pressing down gently to adhere.
- Cover the turkey with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 25-30 minutes, or until the internal temperature of the turkey reaches 165°F (74°C) using a meat thermometer.
- While the turkey is baking, peel and chop 4 large sweet potatoes into chunks. Place them in a large pot of water and bring to a boil. Cook until tender, about 15-20 minutes.
- Drain the potatoes and mash them with a potato masher or puree them in a food processor. Add 1/4 cup butter and 1/4 cup heavy cream or milk and continue mashing or pureeing until smooth and creamy. Add salt and pepper to taste.
- Zest 1 orange and mix with the mashed sweet potatoes for added flavor.
- Let the turkey rest for 10 minutes before slicing and serving with the mashed sweet potatoes.
