Turkey with Dried Fruits and Mashed Sweet Potatoes with Orange Recipe

Ingredients:

  • 1 turkey breast, bone-in (about 2-3 lbs)
  • 1/2 cup dried apricots, chopped
  • 1/2 cup dried cranberries
  • 1/2 cup raisins
  • 1/4 cup unsalted butter, melted
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 2 cloves garlic, grated
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix together chopped apricots, cranberries, raisins, melted butter, honey, orange juice, garlic, thyme, salt, and black pepper.
  3. Place the turkey breast, skin side up, in a baking dish. Spread the dried fruit mixture over the top of the turkey, pressing down gently to adhere.
  4. Cover the turkey with foil and bake for 45 minutes.
  5. Remove the foil and bake for an additional 25-30 minutes, or until the internal temperature of the turkey reaches 165°F (74°C) using a meat thermometer.
  6. While the turkey is baking, peel and chop 4 large sweet potatoes into chunks. Place them in a large pot of water and bring to a boil. Cook until tender, about 15-20 minutes.
  7. Drain the potatoes and mash them with a potato masher or puree them in a food processor. Add 1/4 cup butter and 1/4 cup heavy cream or milk and continue mashing or pureeing until smooth and creamy. Add salt and pepper to taste.
  8. Zest 1 orange and mix with the mashed sweet potatoes for added flavor.
  9. Let the turkey rest for 10 minutes before slicing and serving with the mashed sweet potatoes.
