Vegan Brioche Recipe

Ingredients:

  • 1/2 cup unsweetened almond milk
  • 1/4 cup vegan butter
  • 1/4 cup granulated sugar
  • 1 tablespoon active dry yeast
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Heat the almond milk and vegan butter in a small saucepan until the butter is melted. Remove from heat and stir in the sugar until it dissolves.
  2. Let the mixture cool to lukewarm temperature. Then sprinkle the yeast over the mixture and let it sit for 5-10 minutes or until foamy.
  3. In a large mixing bowl, whisk together the flour, salt, and nutmeg.
  4. Make a well in the middle of the dry ingredients and pour in the yeast mixture and vanilla extract.
  5. Stir everything together until a sticky dough forms.
  6. Transfer the dough to a lightly floured surface and knead for about 5 minutes or until smooth and elastic.
  7. Place the dough in a lightly oiled bowl, cover it with a damp towel, and let it rise in a warm place for 1-2 hours or until it doubles in size.
  8. Preheat the oven to 375°F (190°C).
  9. Punch down the dough and knead it again for a few minutes.
  10. Divide the dough into 8 equal pieces and roll each piece into a ball.
  11. Place the balls on a lined baking sheet, cover them with a damp towel, and let them rise again for another hour.
  12. Bake the brioche for 15-20 minutes or until golden brown.
  13. Cool the brioche on a wire rack before serving.
