Vegan Salad Recipe

Ingredients:

  • 4 cups mixed greens (romaine, spinach, arugula, kale)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup roasted almonds, chopped
  • 1/4 cup dried cranberries
  • 1 avocado, diced
  • 1/4 cup lemon juice
  • 2 tbsp dijon mustard
  • 2 tbsp maple syrup
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions:

  1. Wash and dry the mixed greens. Place them in a large salad bowl.
  2. Add cherry tomatoes, cucumber, red onion, almonds, dried cranberries and avocado to the bowl.
  3. In a small bowl, whisk together lemon juice, dijon mustard, maple syrup, olive oil, salt and pepper until well combined.
  4. Pour the dressing over the salad and toss well to coat all ingredients.
  5. Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld together.
