Vegetable Crumble Recipe

Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 4 cups mixed vegetables (such as carrots, peas, green beans, and corn)
  • 1 cup vegetable broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup breadcrumbs

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat olive oil in a large skillet over medium-high heat. Add onions and cook until softened, about 5 minutes.
