Vegetable Lasagna

Ingredients:

  • 1 lb lasagna noodles, cooked and drained
  • 2 cups tomato sauce
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups chopped mixed vegetables (such as zucchini, eggplant, mushrooms, and bell peppers)
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1 minute.
  3. Add the chopped mixed vegetables, dried basil, and dried oregano and cook until the vegetables are just tender, about 5-7 minutes. Season with salt and black pepper to taste. Remove from heat and set aside.
  4. In a large mixing bowl, combine ricotta cheese, grated Parmesan cheese, and half of the shredded mozzarella cheese. Mix well.
  5. To assemble the lasagna, spread a thin layer of tomato sauce over the bottom of a 9×13 inch baking dish.
  6. Place a single layer of cooked lasagna noodles on top of the tomato sauce, slightly overlapping each other.
  7. Spoon half of the ricotta cheese mixture over the lasagna noodles and spread it evenly.
  8. Spread half of the cooked mixed vegetables over the ricotta cheese mixture.
  9. Repeat with another layer of lasagna noodles, tomato sauce, ricotta cheese mixture, and mixed vegetables.
  10. Top the last layer of lasagna noodles with the remaining tomato sauce and the remaining shredded mozzarella cheese.
  11. Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
  12. Remove the foil and bake for another 10-15 minutes or until the cheese is golden brown and bubbly.
  13. Let stand for 5-10 minutes before serving.

Serving Suggestions:

Serve hot with garlic bread and a green salad.
