Vegetable Lasagna
Ingredients:
- 1 lb lasagna noodles, cooked and drained
- 2 cups tomato sauce
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 2 cups chopped mixed vegetables (such as zucchini, eggplant, mushrooms, and bell peppers)
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and black pepper to taste
Instructions:
- Preheat oven to 375°F (190°C).
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1 minute.
- Add the chopped mixed vegetables, dried basil, and dried oregano and cook until the vegetables are just tender, about 5-7 minutes. Season with salt and black pepper to taste. Remove from heat and set aside.
- In a large mixing bowl, combine ricotta cheese, grated Parmesan cheese, and half of the shredded mozzarella cheese. Mix well.
- To assemble the lasagna, spread a thin layer of tomato sauce over the bottom of a 9×13 inch baking dish.
- Place a single layer of cooked lasagna noodles on top of the tomato sauce, slightly overlapping each other.
- Spoon half of the ricotta cheese mixture over the lasagna noodles and spread it evenly.
- Spread half of the cooked mixed vegetables over the ricotta cheese mixture.
- Repeat with another layer of lasagna noodles, tomato sauce, ricotta cheese mixture, and mixed vegetables.
- Top the last layer of lasagna noodles with the remaining tomato sauce and the remaining shredded mozzarella cheese.
- Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for another 10-15 minutes or until the cheese is golden brown and bubbly.
- Let stand for 5-10 minutes before serving.
