Vegetable Shells
Ingredients:
- 12 large pasta shells
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 small zucchini, chopped
- 1 small yellow squash, chopped
- 1 small red bell pepper, chopped
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese
- 1/2 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
Instructions:
- Preheat the oven to 375°F.
- Cook the pasta shells according to the package instructions. Drain and rinse with cold water to cool the shells.
- In a large skillet, heat the olive oil over medium-high heat. Add the onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add the zucchini, yellow squash, and red bell pepper to the skillet and sauté for an additional 5 minutes, or until the vegetables are tender.
- Add the oregano, salt, and black pepper to the skillet and stir to combine.
- Remove the skillet from heat and add the Parmesan cheese and marinara sauce. Stir to combine.
- Spoon the vegetable mixture into the cooled pasta shells and place them in a baking dish.
- Sprinkle the shredded mozzarella cheese over the top of the filled shells.
- Bake for 15-20 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving.
