Vegetable Shells

Ingredients:

  • 12 large pasta shells
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 small zucchini, chopped
  • 1 small yellow squash, chopped
  • 1 small red bell pepper, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese

Instructions:

  1. Preheat the oven to 375°F.
  2. Cook the pasta shells according to the package instructions. Drain and rinse with cold water to cool the shells.
  3. In a large skillet, heat the olive oil over medium-high heat. Add the onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.
  4. Add the zucchini, yellow squash, and red bell pepper to the skillet and sauté for an additional 5 minutes, or until the vegetables are tender.
  5. Add the oregano, salt, and black pepper to the skillet and stir to combine.
  6. Remove the skillet from heat and add the Parmesan cheese and marinara sauce. Stir to combine.
  7. Spoon the vegetable mixture into the cooled pasta shells and place them in a baking dish.
  8. Sprinkle the shredded mozzarella cheese over the top of the filled shells.
  9. Bake for 15-20 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool for a few minutes before serving.
