Vegetable Tagliatelle Recipe

Ingredients:

  • 1 medium zucchini
  • 1 medium carrot
  • 1 medium red bell pepper
  • 1 medium yellow onion
  • 2 cloves garlic, minced
  • 3 tablespoons olive oil
  • 8 oz tagliatelle pasta
  • Salt and pepper to taste
  • Grated Parmesan cheese for topping (optional)

Directions:

  1. Begin by washing and peeling the zucchini and carrot. Slice the zucchini and carrot into long thin strips (tagliatelle).
  2. Wash the red bell pepper and slice it into thin strips.
  3. Chop the onion into small pieces.
  4. Add the olive oil to a saucepan and heat it up over medium heat.
