Vegetarian Rice Pilaf Recipe

Ingredients:

  • 1 cup Basmati rice
  • 1 tablespoon Olive oil
  • 1 small Onion, chopped
  • 1 teaspoon Cumin powder
  • 1/2 teaspoon Coriander powder
  • 4-5 cloves Garlic, minced
  • 1/2 inch Ginger, grated
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Chili powder
  • 1 3/4 cups Vegetable broth or water
  • 1/2 cup Green peas
  • Salt, to taste
  • 2-3 tablespoons Cilantro leaves, chopped
  • 1/2 Lemon, for garnish

Instructions:

  1. Wash the rice thoroughly with water and soak it for at least 30 minutes.
  2. Heat olive oil in a deep pan and add chopped onions. Saute until the onions turn translucent.
  3. Add cumin powder, coriander powder, minced garlic, grated ginger, turmeric powder, chili powder, and salt. Stir and cook for a minute.
  4. Add the soaked and drained rice to the pan. Saute for a few minutes until the rice turns slightly golden and starts crackling.
  5. Add vegetable broth or water and green peas. Stir and bring it to a boil.
  6. Cover the pan with a lid and let it cook for 18-20 minutes on low heat until the rice is fully cooked and the liquid is absorbed.
  7. Garnish with chopped cilantro leaves and lemon before serving.
