Vegetarian Rice Pilaf Recipe
Ingredients:
- 1 cup Basmati rice
- 1 tablespoon Olive oil
- 1 small Onion, chopped
- 1 teaspoon Cumin powder
- 1/2 teaspoon Coriander powder
- 4-5 cloves Garlic, minced
- 1/2 inch Ginger, grated
- 1/2 teaspoon Turmeric powder
- 1/2 teaspoon Chili powder
- 1 3/4 cups Vegetable broth or water
- 1/2 cup Green peas
- Salt, to taste
- 2-3 tablespoons Cilantro leaves, chopped
- 1/2 Lemon, for garnish
Instructions:
- Wash the rice thoroughly with water and soak it for at least 30 minutes.
- Heat olive oil in a deep pan and add chopped onions. Saute until the onions turn translucent.
- Add cumin powder, coriander powder, minced garlic, grated ginger, turmeric powder, chili powder, and salt. Stir and cook for a minute.
- Add the soaked and drained rice to the pan. Saute for a few minutes until the rice turns slightly golden and starts crackling.
- Add vegetable broth or water and green peas. Stir and bring it to a boil.
- Cover the pan with a lid and let it cook for 18-20 minutes on low heat until the rice is fully cooked and the liquid is absorbed.
- Garnish with chopped cilantro leaves and lemon before serving.
