Vegetarian Stuffed Mushrooms Recipe

Ingredients:

  • 20-25 medium-sized mushrooms, stemmed and cleaned
  • 1 tablespoon olive oil
  • 1 medium-sized onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium-sized carrot, grated
  • 2 cups fresh spinach, chopped
  • 1/2 cup breadcrumbs
  • 1/2 cup parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped

Instructions:

  1. Preheat oven to 375°F
