Warm Goat Cheese Salad
Ingredients:
- 4 cups mixed salad greens
- 1/2 cup crumbled goat cheese
- 1/2 cup walnuts
- 1/4 cup balsamic vinegar
- 2 tsp honey
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Preheat oven to 350°F. Spread walnuts on a baking sheet and toast in the oven for 6-7 minutes, or until fragrant and lightly browned. Remove from the oven and allow to cool.
- While the walnuts are toasting, mix together balsamic vinegar, honey, olive oil, salt and pepper in a small bowl to make the dressing. Set aside.
- Take 4 slices of goat cheese, around 1/4 inch thick, and press to form small patties. Beat an egg and dip the patties in it. Then coat it with bread crumbs.
- Heat up a frying pan with olive oil over high heat. Fry each disk for 1-2 minutes on each until golden brown and slightly melted.
- Arrange the salad greens on plates, and sprinkle with the crumbled goat cheese and toasted walnuts.
- Put the goat cheese on top of the salad greens.
Pour the dressing over the top of the salad and serve.
