Watercress Soup with Bacon Recipe

Ingredients:

  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bunch watercress (about 4 cups), roughly chopped
  • 4 cups of vegetable broth
  • 1 cup of milk
  • 6 strips of bacon, chopped
  • Salt and pepper to taste

Instructions:

  1. In a large pot, cook the bacon over medium heat until crispy.
  2. Remove the bacon with a slotted spoon and set aside on a paper towel to drain off excess oil.
