Wellington Pork Roast Recipe

Ingredients:

  • 1 boneless pork loin (about 2 lbs)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp minced garlic
  • 1 sheet frozen puff pastry, thawed
  • 1 egg, beaten

Instructions:

  1. Preheat the oven to 375°F.
  2. Season the pork loin with salt, black pepper, thyme, rosemary and minced garlic, then rub with olive oil.
  3. Heat a skillet over medium-high heat and sear the pork loin on all sides until browned, about 2-3 minutes per side.
