White Butter Recipe

Ingredients:

  • 2 cups heavy cream
  • 1/2 teaspoon salt
  • Ice water

Instructions:

  1. Pour the heavy cream into a food processor and turn it on. Run the food processor until the butter separates from the liquid, about 10-15 minutes.
  2. As the butter forms, you will see it begin to clump together, separate from the liquid and stick to the sides of the food processor. Once you see this happening, turn off the food processor.
  3. Pour the butter and liquid mixture into a strainer that is set over a bowl. Use a spatula to press the butter out of the liquid and into the bowl.
  4. Transfer the butter to a separate bowl and discard the liquid.
  5. Rinse the butter under cold water, using your hands to press any remaining liquid out. Gently knead the butter to release any leftover liquid.
  6. Add 1/2 teaspoon of salt to the butter and gently mix together.
  7. Add ice water to a separate bowl and place the butter inside. Mix the butter until it is evenly cooled and firm.
