Wild boar stew with red wine and spices

Wild Boar Stew with Red Wine and Spices

Ingredients:

  • 2 lbs of wild boar meat, cut into chunks
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 large carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups of good quality red wine
  • 1 cup of beef or chicken broth
  • 2 bay leaves
  • 1 tsp of dried thyme
  • 1 tsp of paprika
  • 1 tsp of allspice
  • 2 tbsp of olive oil
  • Salt and pepper to taste

Instructions:

  1. Season wild boar meat with salt and pepper.
  2. Heat olive oil in a large Dutch oven or a heavy-bottomed pot over medium-high heat.
  3. Brown the wild boar chunks in batches until they are nicely browned on all sides. Set aside.
  4. Reduce heat to medium and add onion, garlic, carrots, and celery to the pot. Cook until onion is translucent.
  5. Add paprika, thyme, and allspice to the pot and stir for about 1 minute until fragrant.
  6. Return the wild boar chunks to the pot. Add red wine, beef or chicken broth, bay leaves, and more salt and pepper to taste.
  7. Bring the stew to a simmer and let it cook for about 2-3 hours until the meat is tender. If the liquid reduces too much, add more broth or water to keep the meat covered.
  8. Once the meat is tender and the stew has thickened, adjust seasonings to taste.
  9. Serve hot with crusty bread or over mashed potatoes.

Verdict:

This wild boar stew with red wine and spices is a hearty and flavorful meal that will warm you up on chilly nights. The red wine adds a rich depth of flavor to the meat, and the spices give it a nice kick. It’s perfect for feeding a crowd or for meal prep since it tastes even better the next day.
