Wild Boar Stew with Red Wine and Spices
Ingredients:
- 2 lbs of wild boar meat, cut into chunks
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 large carrots, chopped
- 2 celery stalks, chopped
- 2 cups of good quality red wine
- 1 cup of beef or chicken broth
- 2 bay leaves
- 1 tsp of dried thyme
- 1 tsp of paprika
- 1 tsp of allspice
- 2 tbsp of olive oil
- Salt and pepper to taste
Instructions:
- Season wild boar meat with salt and pepper.
- Heat olive oil in a large Dutch oven or a heavy-bottomed pot over medium-high heat.
- Brown the wild boar chunks in batches until they are nicely browned on all sides. Set aside.
- Reduce heat to medium and add onion, garlic, carrots, and celery to the pot. Cook until onion is translucent.
- Add paprika, thyme, and allspice to the pot and stir for about 1 minute until fragrant.
- Return the wild boar chunks to the pot. Add red wine, beef or chicken broth, bay leaves, and more salt and pepper to taste.
- Bring the stew to a simmer and let it cook for about 2-3 hours until the meat is tender. If the liquid reduces too much, add more broth or water to keep the meat covered.
- Once the meat is tender and the stew has thickened, adjust seasonings to taste.
- Serve hot with crusty bread or over mashed potatoes.
