Wild Rabbit with Cider Recipe
Ingredients:
- 1 whole wild rabbit, cleaned and cut into serving pieces
- 2 cups dry cider
- 2 cloves garlic, minced
- 1 onion, chopped
- 3 tablespoons olive oil
- 2 sprigs fresh thyme
- 1 bay leaf
- Salt and pepper, to taste
Instructions:
- Preheat oven to 350°F (175°C).
- Heat the olive oil in a large skillet over medium heat. Add the rabbit pieces and brown them on all sides.
- Remove the rabbit from the skillet and set aside.
- Add the onion and garlic to the skillet and cook until onion is translucent.
- Stir in the cider and bring to a boil.
- Add the thyme, bay leaf, salt and pepper to taste.
- Add the rabbit pieces to the skillet, making sure they are all coated in the cider mixture.
- Cover the skillet with a lid or aluminum foil and place it in the preheated oven. Roast for 1-1 1/2 hours or until the rabbit is tender and cooked through.
- Remove the skillet from the oven and let it rest for a few minutes before serving.
