Wild Rabbit with Cider Recipe

Ingredients:

  • 1 whole wild rabbit, cleaned and cut into serving pieces
  • 2 cups dry cider
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 3 tablespoons olive oil
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • Salt and pepper, to taste

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Heat the olive oil in a large skillet over medium heat. Add the rabbit pieces and brown them on all sides.
  3. Remove the rabbit from the skillet and set aside.
  4. Add the onion and garlic to the skillet and cook until onion is translucent.
  5. Stir in the cider and bring to a boil.
  6. Add the thyme, bay leaf, salt and pepper to taste.
  7. Add the rabbit pieces to the skillet, making sure they are all coated in the cider mixture.
  8. Cover the skillet with a lid or aluminum foil and place it in the preheated oven. Roast for 1-1 1/2 hours or until the rabbit is tender and cooked through.
  9. Remove the skillet from the oven and let it rest for a few minutes before serving.

Serving Suggestions:

This Wild Rabbit with Cider dish pairs well with cooked potatoes and seasonal vegetables such as carrots or green beans. Serve it with a glass of dry cider for a complete meal.
