Zucchini and Carrot Gratin

Ingredients:

  • 3 medium-sized zucchinis, sliced
  • 3 medium-sized carrots, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1 tbsp butter
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions:

  1. Preheat oven to 375°F (190°C)
  2. Melt butter in a saucepan over medium heat. Add minced garlic and sauté until fragrant.
  3. Add sliced zucchinis and carrots and stir well. Cook for 5-7 minutes or until the vegetables are tender.
  4. Add heavy cream, dried thyme, salt and pepper to taste. Mix well until the vegetables are evenly coated with the cream.
  5. Transfer the vegetable mixture to a baking dish and spread it out evenly.
  6. Top the vegetable mixture with grated Parmesan cheese.
  7. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and golden brown.
  8. Let it cool for 5 minutes before serving.
