Zucchini, Aubergine and Tuna Gratin

Ingredients:

  • 2 large zucchinis, thinly sliced
  • 1 large aubergine, thinly sliced
  • 2 cans of tuna, drained
  • 1 can of diced tomatoes
  • 1 cup of grated Parmesan cheese
  • 2 cups of shredded mozzarella cheese
  • 1 tablespoon of olive oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium-high heat. Add garlic and sauté for 1 minute.
  3. Add zucchini and aubergine to the skillet and cook until tender, about 5-7 minutes. Season with oregano, salt, and pepper.
  4. Add diced tomatoes and drained tuna to the skillet and stir until combined.
  5. Transfer the mixture to a baking dish, and sprinkle the top with Parmesan cheese and mozzarella cheese.
  6. Bake for 20-25 minutes or until golden brown.
  7. Let it cool for a few minutes, then serve and enjoy!
